How to Make It
- Start with cooking ground beef in a large sauce pan. Add rotel to ground beef when close to being brown or later depending on prefrence of texture. Mix chili seasoning to beef mixture and simmer for 20 min adding any extra seasons you prefer. While cooking the chili mix make the corn bread mix , following the directions on the box, save a little less then half of the corn bread mix for the top of the chili mix. Best if cooked in a glass pyrex dish small square size. Let the corn bread cool down for about 10 min, while thats cooling add the full can of corn and half a cup of cheese to the chili mix and stir gently.
- Then spread the other half cup of cheese to the top of corn bread followed by spreading the chili mix on top of the corn bread and cheese. Top the chili mix with the left over corn bread mix and bake on 400 for about 10-15 min or when the corn bread is golden brown. Let cool for 5 min then slice into small square chunks.You can add hot sauce, sour cream , or quacamole for a little somthing extra. Also add beans if you like your chili that way. This is a great dish to be reheated for a couple of days !!!! Not to un healthy either.
